Chef David Bruno is an associate professor of Culinary Arts at CIA, where he teaches fundamental courses, including Introduction to À La Carte Cooking and Cuisines of the Mediterranean. Over his nearly 25-year tenure at CIA, he has also taught Advanced Culinary Principles, Banquets and Catering, Lunch Cookery, and Culinary Skills Development. He also educated industry professionals and food enthusiasts through the college’s Continuing Education Department.
A Certified Hospitality Educator (CHE) and a Certified Executive Chef (CEC), Bruno graduated from CIA in 1988 with an associate degree in Culinary Arts. He later earned a Baking and Pastry Arts Certificate from CIA and has received dual certification from CIA and the American Culinary Federation (ACF) as a ProChef® Level III (PCIII). One of his key roles is supporting the administration of the ProChef certification program in countries such as China, Brazil, and Jamaica. He also holds a bachelor’s of professional studies in Elementary Education and Teaching from SUNY Empire State College.
With more than 35 years of industry experience, Bruno has held leadership roles at several acclaimed establishments. This includes executive chef at Cripple Creek, Bing’s restaurants, and Ardsley Country Club, all in New York’s Hudson Valley; executive sous chef and head chef at the Mayflower Inn in Washington, CT; and sous chef at La Crémaillère in Banksville, NY.
He is a member and vice president of the Mid-Hudson chapter of the American Culinary Federation. His accolades include the Maîtres Cuisiniers de France for the best meat display at the 2009 Société Culinaire Philanthropique Salon of Culinary Art in New York City and a gold medal at the 2011 and 2010 Salon of Culinary Art in New York City, and a gold medal in the ACF Hot Food Competition in 2008. He proudly coached the CIA/ACF student team in 2011, 2012, and 2013, garnering his team’s gold and silver medals.
Outside the kitchen and classroom, Bruno enjoys playing golf and the drums, kayaking, going to the beach, and hiking in the woods.
