Dr. Raimundo Carlos Gaby Jr. is an associate professor of Hospitality and Service Management at CIA’s New York campus, where he has inspired and mentored future hospitality leaders since 2004. A proud CIA alum, Dr. Gaby teaches courses in Foodservice Management, Profitability, Service Excellence, and Leadership, bringing together academic rigor, industry experience, and a deep belief in the transformative power of hospitality.
Before joining CIA’s faculty, Dr. Gaby built a distinguished career in fine dining and luxury hospitality in New York City. His professional experience includes leadership roles at some of the industry’s most respected organizations, including Lutèce Restaurant, Oceana Restaurant, Restaurant Associates at Goldman Sachs, and The Waldorf-Astoria Hotel. These experiences continue to inform his teaching, allowing students to connect hospitality theory with the realities of world-class service and operations.
Dr. Gaby holds a Doctor of Education and a Master of Arts in Adult Learning and Leadership from Teachers College, Columbia University. He also holds bachelor’s and associate degrees in Culinary Arts, both from CIA. His academic interests focus on hospitality culture, service excellence, leadership development, and the human connections that elevate memorable guest experiences. He is particularly passionate about helping students discover their own leadership voice and understand hospitality as both a profession and a calling.
Beyond the classroom, Dr. Gaby is an artist, photographer, mentor, and lifelong learner. Born in Brazil and living in the United States for more than three decades, he explores themes of memory, spirituality, nature, and transformation through painting and photography. His exhibitions have been featured throughout the Hudson Valley, and his recent photographic work, The Garden Beneath the Surface, combines flowers, water, light, and movement to create dreamlike images that invite reflection and wonder.
Inspired by Dr. Gaby’s years of teaching and mentorship, a donor family established the Professor Raimundo Gaby ’97 Legacy Scholarship to support future CIA students. The scholarship reflects his enduring commitment to service, leadership, generosity, and the success of the next generation of hospitality professionals.
Fluent in Portuguese, Spanish, and English and conversant in French, Dr. Gaby enjoys travel, music, photography, wine education, and gathering family and friends around the table. Whether teaching, creating art, or mentoring the next generation of hospitality professionals, he believes that meaningful human connection remains at the heart of every memorable experience.
