Reduced Hours and Activities During Late July/August

We love to welcome campus visitors, but before you make your plans, please note that amazing changes are underway at the CIA campuses during the summer and our visiting hours and restaurant hours may be affected.

Please note that classes for degree and certificate program students at all of our U.S. campuses will not be in session from July 27–August 20, 2018. Classes will resume on August 21.


  • The Admissions Office at all three campuses will be open to welcome prospective students and their families.


  • Since many of our restaurants rely on our students for the full CIA dining experience, please refer to for the most up-to-the-minute information.
  • At the New York campus, all restaurants will be closed during this period.
  • At the CIA at Greystone in St. Helena, California, The Bakery Café by illy will be open, but Gatehouse Restaurant will be closed.
  • At the CIA at Copia in Napa, California, The Restaurant at CIA Copia and Contimo Provisions will be open.
  • At the Texas campus, the CIA Live Fire Kitchen will be open Thursday–Sunday, and Nao will be closed.

    Great news! Your work experience in the food world may qualify you for transfer credits that will enable the CIA to waive the semester-long externship in our celebrated culinary arts and baking & pastry arts degree programs. If you have full-time foodservice work experience that features progressive levels of responsibility, the CIA Accelerated Degree Option is for you.

    Here’s what you need to qualify:

    • At least 2 1/2 years of post-high school, full-time foodservice experience
    • Demonstrated skill and achievement in a professional kitchen

    Here’s how to apply:

    1. Choose your campus—New York, California, or Texas.
    2. Submit your CIA application for admission.
    3. Complete the “Application for Externship Credit” form, where you can upload your:
      • Résumé
      • Additional professional letter of recommendation
      • Supporting information that demonstrates your experience—e.g., menus, photos, and/or links to social media sites like LinkedIn
    4. Interview with a CIA representative, as requested.

    You can submit your application for the Accelerated Degree Option externship waiver any time prior to, or before the end of, your first semester at the CIA. You’ll be notified of a decision within two weeks of the application decision. Please be aware that seats are limited for this unique offering, so apply now!
