Reduced Hours and Activities During Late July/August

We love to welcome campus visitors, but before you make your plans, please note that amazing changes are underway at the CIA campuses during the summer and our visiting hours and restaurant hours may be affected.

Please note that classes for degree and certificate program students at all of our U.S. campuses will not be in session from July 28–August 21, 2017. Classes will resume on August 22.


  • The Admissions Office at all three campuses will be open to welcome prospective students and their families.


  • Since many of our restaurants rely on our students for the full CIA dining experience, please refer to for the most up-to-the-minute information.
  • At the New York campus, all restaurants will be closed during this period.
  • At our California campus locations (Copia and Greystone), The Restaurant at CIA Copia and The Bakery Café by illy will be open.
  • At the Texas campus, Nao will be open for lunch and the outdoor taco stand will also be open.

Course Bio: Art and Science of Brewing

Brew beer! In this bachelor’s program elective, you’ll work in a real brewery right on campus, creating a selection of beers to be sold in the CIA’s campus restaurants and bakery café. You’ll learn everything from history to marketing to the basics of how to brew beer. It’s a completely immersive beer education.

Gain valuable insight and amazing hands-on experience in the rapidly expanding world of craft brewing. Beer sells, and the food industry is looking for professionals ready to manage brew pubs, advance retail sales for breweries, lead beverage programs, and so much more. This course will help you become that professional.

In Art and Science of Brewing, you will:

  • Learn how to make beer, from ingredients to brewing equipment to techniques.
  • Examine key topics like food and beer pairing, maintaining a proper beer list, and the business of the beer industry.
  • Explore the basic organic chemistry and biology of beer.
  • Get right into the thick of the action in The Brewery at the CIA, a brewing classroom like no other!
  • Produce CIA craft beers, including the college’s two flagship brands—Cleaver IPA and Mise en Place Wit—as well as a rotating lineup of “class project” seasonal beers.
