The Culinary Institute of America’s Restaurant Pops-Up Again

Pangea Re-Opens Focusing on Plant-Forward and Globally Inspired Cuisine

Hyde Park, NY – The CIA Restaurant Group announces the re-opening of its popular Pangea restaurant at the Hyde Park campus of The Culinary Institute of America. The pop-up restaurant will have a limited run through June 16, 2016. This time, Pangea has popped-up where the former St. Andrew’s Café was located, adjacent to the Marriott Pavilion.

Pangea showcases a menu that features an array of inspired dishes that both celebrate and bring together the most diverse cultural flavors and influences from around the world. Pangea’s plant-forward offerings and thoughtful use of meats and seafood reflect today’s desire to protect our food resources while eating absolutely deliciously. Pangea explores the world’s interconnected foodways while uniting and transforming them.

“We believe dining should be a global adventure you share with friends right in your own neighborhood,” says Waldy Malouf, senior director of food and beverage operations at The Culinary Institute of America. “With this second opening, we continue to develop our original plant- and grain-focused cuisine that emphasizes the flavors and culinary possibilities of cooking with less animal proteins and more vegetal elements. This allows us to continue to develop new delicious dishes that also have a positive nutritional value.”

Pangea’s seasonal offerings include favorite original menu items such as Pressed Tomato Sushi Roll with Parsnip “Rice” and such new dishes as Ruby Beet Tartare with Herbed Madeleines; Smoked Haddock with Kale Salad and Lime Yogurt; Oxtail, Truffle, and Mushroom Pie; and Cast Iron Cornish Game Hen.

New for this season, patrons can choose items from an à la carte menu.

The pop-up was conceived to invoke a uniquely exciting dining experience with a shared sense of adventure. Aligned with the plant-forward theme, the restaurant’s design incorporates reused and recycled elements. The decor is urban and relies mostly on the use of “found” objects, artifacts, furnishings, china, and glassware.

Through June 16, 2016, Pangea is open Tuesday through Saturday for dinner from 5:30 to 8:30 p.m. Lunch service begins March 10 and continues through May 5.
