Classes for degree and certificate program students at all of our U.S. campuses will not be in session from July 27–August 19, 2019. Classes will resume on August 20.


  • The Admissions Office at all three campuses will be open to welcome prospective students and their families.


  • Since many of our restaurants rely on our students for the full CIA dining experience, please refer to www.ciarestaurantgroup.com for the most up-to-the-minute information.
  • At the New York campus, all restaurants will be closed during this period.
  • At the CIA at Greystone in St. Helena, CA, The Bakery Café by illy will be open, but Gatehouse Restaurant will be closed.
  • At The CIA at Copia in Napa, CA, The Restaurant at CIA Copia, Grove, and Contimo Provisions will be open.
  • At the Texas campus, the CIA Live Fire Kitchen will be open Thursday–Sunday, and Savor will be closed.

Johnny Hernandez '89 Delivers Commencement Address

San Antonio, TX – Ten proud students at The Culinary Institute of America (CIA), San Antonio received their Associate in Applied Science (AAS) diplomas during commencement ceremonies at the Pearl complex on Wednesday, July 3.

San Antonio native Johnny Hernandez, a 1989 graduate of the CIA at the college's main campus in Hyde Park, NY, was the keynote speaker at the ceremony. Hernandez is executive chef and owner of La Gloria Ice House, Casa Hernán, Frutería Botanero, and True Flavors Catering, and is working on his first cookbook and memoir, México Mi Gloria. He was named one of the Five Top Latino Chefs in the United States by Siempre Mujer magazine in 2011.

This was just the second graduation for the AAS in culinary arts at the San Antonio campus, with the first having been held in April. The 10 graduates join the ranks of accomplished CIA alumni, which number more than 45,000 since the college's founding in 1946. The newly minted alumni can now continue their studies in the CIA's bachelor's degree programs in culinary arts management or culinary science at the Hyde Park campus.

More aspiring culinarians will be following in these graduates' footsteps: the next group of CIA San Antonio students will earn their associate degrees in culinary arts on October 18. And a second AAS major—baking and pastry arts—will be offered at the San Antonio campus beginning in August.
