CIA Provides Window into New York State Food History

"State of Ate" is an exhibit on the CIA's New York campus curated by students in the college's Applied Food Studies program; and "Dining through Time in the Hudson Valley" is a special dinner at the American Bounty Restaurant. Hudson Valley magazine features these two programs, which together offer a look at the ingredients critical in shaping the economy and culinary growth of New York State and how the foods of the Hudson Valley developed from indigenous times to today.
