Lecturing Instructor in Table Service

Heather Foulks is a lecturing instructor in table service at The Culinary Institute of America (CIA). Ms. Foulks is maître d' instructor in St. Andrew's Café, one of five public restaurants on the CIA's main campus in Hyde Park, NY. The restaurant is also a classroom for students in the CIA's culinary arts degree programs. Ms. Foulks teaches Introductory Table Service, a course that explores table service principles and skills by providing customer service in a restaurant setting. Her students focus on guest relations, professional communications, service sequence, table skills, and dining room preparation.

A 2002 graduate of the CIA associate degree program, Ms. Foulks earned a B.S. from Cornell University, School of Hotel Administration in Ithaca, NY. Before joining the CIA faculty, she held a variety of front-of-the-house positions for the three restaurants—The Peak, Westbank Grill, and Lobby Lounge—at The Four Seasons Resort in Jackson Hole, WY. She also was assistant manager at the Garden Terrace Lounge in the Four Seasons Hotel in Washington, DC and The Peninsula Grille in Warrington, PA, as well as banquet server at The Statler Hotel in Ithaca.

Ms. Foulks is a member of the Cornell Hotel Society, Network of Executive Women in Hospitality, and Women Chefs and Restaurateurs.
