Lecturing Instructor in Cafe Operations

Denise A. Hall is a lecturing instructor in Café Operations at The Culinary Institute of America (CIA). Ms. Hall is maître d' instructor in the Apple Pie Bakery Café, one of five public restaurants on the CIA's main campus in Hyde Park, NY. The restaurant is also a classroom for students in the CIA's baking and pastry arts degree program, and the final course before baking and pastry arts majors earn their associate degree. Ms. Hall teaches Beverages & Customer Service, a course that explores various models of beverage service, including hot and cold drinks and a range both alcoholic and non-alcoholic beverages. Students also focus on food and beverage pairing as well as sales and service.

Ms. Hall is a 1996 CIA graduate. She returned to her alma mater as a faculty member, after serving as a consultant for the Black Water Center in Lumberton, NC and Bon Vivant Catering in Durham, NC. She was also chef proprietor of 608 Catering Company and an entrepreneur with The Board Womb in Durham. Denise previously worked for the CIA as a demonstration chef at the college's Greystone campus in St. Helena, CA and as a producer for Digital Chef.

In addition to her degree from The Culinary Institute of America, Ms. Hall holds a Bachelor of Arts degree from Vassar College in Poughkeepsie, NY and completed additional studies at The School for American Chefs at the Beringer Vineyards in St. Helena, CA. Denise earned an award from Food & Wine magazine in 1995 as one of the "10 Best Student Chefs." She also placed second in a national recipe contest sponsored by Durkee Foods.
