William Woys Weaver is a food historian, and the author of several books, including 100 Vegetables and Where They Came From, and Pennsylvania Dutch Country Cooking. He is also the editor of the Encyclopedia of Food and Culture.

Ken Albala is Professor of History at the University of the Pacific. He is the author of The Banquet: Dining in the Great Courts of Late Renaissance Europe, Eating Right in the Renaissance, Cooking in Europe: 1250–1650, Beans: A History, and Food in Early Modern Europe. Dr. Albala is also the editor of the Food Culture Around the World Series published by Greenwood Press.
