CIA Students take turns cooking for each other, under the tutelage of our great chefs, and your "average" student meal is... well, anything but average, especially when you dine in the stately, gorgeously, restored Farquharson Hall, with its stained-glass windows returned to their original splendor.

One Heck of a Meal Plan
The food you'll be eating on a daily basis offers you the breadth of global cuisines, a variety you simply won't find at other culinary schools. As you go from kitchen to kitchen surveying the awesome selections, it's like an on-campus international food court.
On a typical day, you may choose from Cuisines of the Americas such as Guava-glazed Pork Ribs, Red Snapper "Florribean" style, and a Cuban Sandwich; Asian selections like a Sushi Platter, Beef Teriyaki, and Shrimp Tempura; or Italian flavors including Sea Bass with a Sicilian Olive Sauce, Fresh Egg and Spinach Pasta, and Potato Gnocchi with Sun-dried Tomato Sauce.
Baking & pastry students create a similarly broad and exciting range of breads, pastries, and desserts for student dining. Enjoy treats like Butter Croissants, Apple and Walnut Sourdough, and Citrus Shortbread Cookies. And taste elegant desserts such as Chocolate Sabayon Torte, Gateau St. Honoré, Lemon Curd Tartlets, and Strawberry Napoleons.

Many culinary school students cook only for themselves. Not so at the CIA. Our students produce food in amazing quantities and share their creations with the campus community. During 1,300 hours of hands-on learning, you'll sharpen your skills, develop your palate, and enrich your sense of taste as you prepare many great dishes for your fellow students.
A Taste of the Restaurant World
CIA students are in "the house!" The "back" and the "front" of the house, that is. At The Culinary, you'll benefit from a rotation in one or more of the famous public restaurants on our campus. You'll spend half your time cooking or baking; you'll spend the other half greeting and serving patrons. It's the ultimate example of "learning by doing."
All of our restaurants—American Bounty, Escoffier, Ristorante Caterina de' Medici, St. Andrew's Café, and Apple Pie Bakery Café—are award-winning, and they have drawn praise from renowned publications such as the Zagat Survey.
